Weekend Recipe: Mango Ice Cream

After months and months of quiet pining, a very nice ice cream maker finally came home with me last week 
: )

I wanted to make something deep, dark chocolate from this book but the universe decided otherwise. 

We had a lot of yummy mangoes in the house that were going ripe faster than we could eat them so, into the ice cream machine they went.

As you can imagine, there are tons of Mango Ice Cream recipes out there but, I chose this one because it had the most fruit in it : )

Mango Ice Cream

2 cups frozen or fresh mangoes, cubed
1/3 cup sugar (or more to taste if your mangoes aren't that sweet)
1 cup heavy cream

Mix mangoes, sugar and heavy cream in a food processor and purée until smooth. Strain and chill thoroughly. Pour your mango mixture into your ice cream maker, following manufacturer's directions. Once done, transfer your ice cream into a container, cover surface with some parchment paper and make sure the lid is on properly. Allow your ice cream to set in the freezer. Before serving, let it sit at room temperature for 3 or 4 minutes before scooping.
